Green Thai Curry Paste

Ingredients

8 pc green chillies
12 pc garlic cloves
8 pc shallots
2 pc lemon grass stalks
2 tsp galanga (or ginger) – grated
2 tbs chopped coriander roots
1 bunch coriander leaves
1 tbs kaffir lime peel

1 tsp white pepper
2 tsp roasted coriander seeds
1 tsp roasted cumin seeds
1 tsp ground nutmeg
1.5 tsp shrimp paste
4 tbs ground or chopped roasted peanuts
4 tbs oil
salt

Method

  • Purée the deseeded chillies, garlic, shallots, lemongrass, galanga, coriander roots, leaves and lime peel (adding enough water to form a paste)
  • Add the pepper, coriander seeds, cumin seeds, nutmeg, salt, shrimp paste and blend until combined
  • Add peanuts
  • Slowly add oil until thick
