Ingredients

500 gm chillies
10 pc garlic cloves – peeled
1/2 cup sugar
1 tbs sea salt
1/4 cup vinegar
sq olive oil

Method

  • Remove the seeds and the white internal 'pith' from the chillies
  • Roughly chop the garlic cloves
  • Place into a food processor with the sugar and salt and pulse until pureed, adding sufficient vinegar to loosen
  • Place into a jar and cover with oil
  • Place lid onto jar and refrigerate
