"During our cooking classes in Liguria this is one of our favorite meals. It makes for a dramatic presentation."


1 sea bass (or other firm white-fleshed fish) of about 2 - 2 ½ pounds
2 ½ pounds rock salt (more or less depending on size of pan used)
Fresh rosemary


  • Clean the inside of the fish well and cut off the fins. Wash and dry it.
  • Place some table salt and a stick of rosemary inside its stomach.
  • In an ovenproof baking dish, make a shallow bed of rock salt. Place the fish on top and cover the fish with the remaining salt, making sure that the fish is completely covered.
  • Place in an 350°F oven and cook until the salt has formed a hard crust.
  • Remove from the oven and take the dish to the table.
  • Horizontally slice open the salt crust, making sure not to damage the fish. Remove the fish, place on a serving platter and divide it into portions.
  • Mix lemon juice and olive oil together and serve it on the fish with a sprig of rosemary used as a brush.
