"This
makes a delicious dessert. Simply drizzle the liqueur
over lemon gelato or lemon sorbet in a martini glass.
Top with lemon zest and serve."
Ingredients
1
1/4 pounds organically grown lemons
1 quart pure grain alcohol
1 quart water
1 1/2 cups liquid sugar (or half water and half sugar
boiled to a syrup)
Method
- Remove
the yellow peel of the lemon (making sure to avoid
the pith or white part) by using a vegetable peeler
or knife.
- Place
the peel and the alcohol in a hermetically sealed
jar in the dark for 1 week.
- After
one week, prepare the simple syrup by adding the liquid
sugar to boiling water. Stir the mixture until the
sugar has dissolved. Let the syrup cool.
- Remove
the lemon peels from the alcohol and discard.
- Mix
the simple syrup and the alcohol together.
- Bottle
the mixture, seal well and let rest for at least a
month before drinking.
