Rice Pie - Torta di Riso

"This rice pie is a traditional dish in Liguria. It makes a light meal with a salad and at least one Italian boy we know says this is his favorite afternoon snack."


1 3/4 cups rice for risotto
4 eggs
4 cups milk
3/4 cup grated parmigiano reggiano cheese
1 tbsp unflavored breadcrumbs


  • Boil the rice and drain it when it is 'al dente'.
  • Place the boiled rice in a large bowl then add the milk, the salt, pepper, thyme and parmesan cheese. Stir.
  • Add the eggs and mix well.
  • Butter a non-stick ovenproof pan. Pour the mixture into the pan and sprinkle the breadcrumbs over the pie.
  • Bake the pie in a 350°F oven until the rice starts to turn a golden brown.
  • Test the pie with a toothpick to see if the pie is done inside (the toothpick should come out dry).
  • Remove the pie from the oven, let cool and serve.
