"This
rice pie is a traditional dish in Liguria. It makes
a light meal with a salad and at least one Italian
boy we know says this is his favorite afternoon snack."
Ingredients
1
3/4 cups rice for risotto
4 eggs
4 cups milk
salt
pepper
thyme
3/4 cup grated parmigiano reggiano cheese
1 tbsp unflavored breadcrumbs
Method
- Boil
the rice and drain it when it is 'al dente'.
- Place
the boiled rice in a large bowl then add the milk,
the salt, pepper, thyme and parmesan cheese. Stir.
- Add
the eggs and mix well.
- Butter
a non-stick ovenproof pan. Pour the mixture into the
pan and sprinkle the breadcrumbs over the pie.
- Bake
the pie in a 350°F oven until the rice starts
to turn a golden brown.
- Test
the pie with a toothpick to see if the pie is done
inside (the toothpick should come out dry).
- Remove
the pie from the oven, let cool and serve.
