A truly delicious tapa using the most traditional Spanish ingredients and a great way to use your Serrano ham as you get towards the end.

Ingredients for Serrano Ham and Tomato Salsa

200g Serrano Ham cut into cubes
1 medium onion
6 cloves garlic
5 medium ripe tomatoes
Olive oil
Hand full chopped parsley
Salt

How to make Serrano Ham and Tomato Salsa

  • Peel the garlic and onion and chop as small as you can.
  • In a large frying pan, heat a little olive oil, add the onion and garlic and cook gently until they begin to soften.
  • Add the diced Serrano ham to the pan, and cook for a few minutes.
  • Chop the tomatoes into small pieces and add to the pan.
  • Cook on a high heat for a few minutes, add the chopped parsley, stir and reduce the heat.
  • Cook gently for about half an hour until the sauce has reduced.
  • Check the seasoning, but don't add too much salt as the ham will add salt of its own.
  • Serve on small tapas dishes with fresh bread.
