Recipe for :

Crab Pie

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

This is one such recipe. If you know where it originated, or perhaps it is even yours, let me know and I will add the necessary credits and acknowledgements.

"The most indispensable ingredient of all good home cooking - love, for those you are cooking for" ~ Sophia Loren.

2 tbsp butter
1 cup sliced onion rings
1/2 cup celery, chopped
1 cup crab meat
1 1/2 cup grated cheese
1 x 9" unbaked pastry case
3 x eggs 1 tsp salt
1/2 tsp pepper
2/3 cup half and half cream or single cream
1 x pinch red pepper

  • Sautee the onion rings and celery in butter until the onion is soft and golden.
  • Spoon alternate layers of crab, cheese (your choice - use sharp, cheddar, or Swiss), and onion and celery mix into pie case.
  • In bowl, beat together eggs, cream, salt and pepper.
  • Pour into pastry case over other Ingredients.
  • Bake in hot oven, 400F°, until firm, about 30 - 40 minutes. When knife point inserted into centre comes out clean, filling is set.
  • May be decorated with tomato wedges or cherry tomatoes.
  • Cool slightly before cutting.

Tuna, salmon, shrimp, or flaked fish may be substituted for crab meat
