Crab Cakes with Tarragon Sauce

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

Ingredients

1 lb crab meat
1 tsp Worcestershire sauce
2 tbsp mayonnaise
1 x egg, beaten
1/4 cup Cracker meal
1 x garlic to taste
1 x pinch cayenne pepper

Sauce:
1/4 lb butter
1 tsp fresh lemon juice
1 tbsp tarragon vinegar
1 tsp white wine

Method

Sauce:

  • Combine Ingredients, heat, and serve over crab cakes (see separate recipe).
  • Chopped parsley and chives may be added if desired.

Crab cakes:

  • Combine all Ingredients and form into small cakes.
  • Sautee in butter.
  • Serve hot with tarragon sauce.
