lovely simple rice dish with Mediterranean vegetables.
Serve in small portions as a tapa or as a side to chicken
or fish.
Ingredients
for Andalucian Rice
1
cup rice per person
Garden peas (fresh are best)
Small tin sweet corn
Small red pepper finely chopped
Olive oil
How
to make Andalucian
Rice
- Cook
the rice according to the instructions
- When
cooked, leave the rice to cool
- Mix
the pepper, peas and sweet corn with the cooled rice
- Season
with salt and add a small drizzle of olive oil
You
can add a variety of other vegetables such as spring
onion, green pepper or cucumber.
