A very popular dish served in bars and restaurants in Andalucia, especially along the coast. Light and fresh it is perfect for a quick, healthy lunch.

Ingredients for Andalucian Fried Squid

3 - 4 whole squid
Tip of a dried chilli pepper, finely chopped
Olive oil
Flour
Salt and pepper
Handful fresh parsley

How to make Andalucian Fried Squid

  • Clean the squid under running water. Next pull the head away from the body, cut in half and pull out the beak and bone.
  • Then slice up the squid into rings.
  • Dust the squid with flour, shaking off the excess.
  • Heat a little oil in a frying pan or large cazuela, add the chopped chilli and cook the squid for about 10 minutes until it is white and fleshy but still tender.
  • Serve on a plate with tomatoes, season with salt and pepper, add a generous drizzle of olive oil and garnish with chopped parsley.
