This
Spanish Tapas recipe for Poor Mans Potatoes (Patatas

Ingredients
for Poor Mans Potatoes
300ml
olive oil
3 Spanish onions, thinly sliced
5 garlic cloves, thickly sliced
1 kg potatoes, peeled and cut into large cubes
3 green peppers, seeded and roughly chopped
4 bay leaves
Salt, pepper
How
to make Poor Mans Potatoes
- Heat
5 tablespoons of oil in a large sauté pan or a wok,
when hot add the onions, lower the heat and cook the
onions slowly stirring from time to time.
- When
the onions turn soft and slightly brown add the garlic,
pepper and bay leaves and cook for 15 minutes.
- Add
the potatoes, salt and the remaining oil.
- Let
everything simmer gently for another 20 minutes or
until potatoes are soft.
- Drain
the excess oil (reserve it for another time e.g. making
tortilla) and serve.
