1 Aubergine (sliced into 10mm (1/3) pieces)
1 Red pepper (de-seeded and roughly chopped)
2 Courgettes (sliced into 10mm pieces)
1 Red onion (peeled and roughly chopped)
1 Clove of garlic (crushed)
1 Tin (250ml) chopped tomatoes
1 Tablespoon of olive oil
1 Teaspoon of mixed herbs
Salt and freshly ground black pepper
to make Ratatouille
the oil in a pan, then add the onion and garlic, sauté
for 2 minutes.
off heat, add chopped tomatoes, seasoning and herbs.
to one side and allow to cool.
