Ingredients for Crispy Herring with Spinach and Pinenuts

455g (1lb) herring fillets
1-2 x 15ml spoon (1-2 tablespoons) olive oil
1 small onion, chopped
55g (2oz) frozen spinach, slightly thawed
55g (2oz) fresh breadcrumbs
30g (1oz) Parmesan cheese
salt and black pepper
15g (half an oz) pinenuts, lightly chopped

How to make Crispy Herring with Spinach and Pinenuts

  • Preheat the oven to 220°C / 425°F / Gas Mark 7.
  • Heat the oil in a pan, add the onion and cook for 2 - 3 minutes.
  • Add the spinach, breadcrumbs and cheese, cook for 1 minute and set aside to cool.
  • Place each fillet onto a chopping board skin side down and season with salt and pepper.
  • Spoon the stuffing over each fish, roll up and secure with a cocktail stick, if necessary.
  • Bake for 10 - 15 minutes, garnish with pinenuts and serve with a green salad and Ciabatta or pitta bread.
