for Crispy Herring with Spinach and Pinenuts
(1lb) herring fillets
1-2 x 15ml spoon (1-2 tablespoons) olive oil
1 small onion, chopped
55g (2oz) frozen spinach, slightly thawed
55g (2oz) fresh breadcrumbs
30g (1oz) Parmesan cheese
salt and black pepper
15g (half an oz) pinenuts, lightly chopped
to make Crispy Herring with Spinach and Pinenuts
the oven to 220°C / 425°F / Gas Mark 7.
the oil in a pan, add the onion and cook for 2 - 3
the spinach, breadcrumbs and cheese, cook for 1 minute
and set aside to cool.
each fillet onto a chopping board skin side down and
season with salt and pepper.
the stuffing over each fish, roll up and secure with
a cocktail stick, if necessary.
for 10 - 15 minutes, garnish with pinenuts and serve
with a green salad and Ciabatta or pitta bread.
