Spanish sherry as an ingredient really adds an authentic
flavour to Spanish chicken dishes. In this recipe we
have chicken pieces baked with garlic and Amoroso
Sherry.
Ingredients
for Spanish Chicken in Garlic and Sherry
4 chicken legs cut into thirds
3 potatoes, peeled and sliced
4 cloves garlic squashed and peeled
3 - 4 sprigs fresh thyme
Salt and pepper
Good sized glass Amoroso Sherry
Olive oil
How
to make Spanish Chicken in Garlic and Sherry
-
Season the chicken pieces with salt and pepper then
heat a little olive oil in a large oven proof dish
which can be placed over the hob.
- Brown
the chicken pieces in the dish until golden all over
and remove.
- While
the dish is still over the heat, add the garlic, thyme
and potatoes and cook for a few minutes moving around
so they all get a good covering of the juices.
- Spread
the ingredients out so they are in one layer in the
bottom of the dish and add the browned chicken pieces.
- Pour
over the sherry and bring to the boil, cooking for
a few minutes.
- Place
the dish into a preheated oven and cook for 40 minutes
or so until the potatoes are tender and most of the
sherry has been absorbed.
- Serve
with seasonal vegetables.
