Serrano Ham and spinach are a great combination and
this recipe for Serrano ham salad with spinach is light
yet satisfying. Great as a starter or as a summer's
lunch.
Ingredients
for Wilted Spinach and Serrano Ham Salad
1 bunch fresh spinach
1 onion
2 tomatoes
4 thick slices Serrano ham, cut into pieces
Olive oil
White wine vinegar
Salt and pepper
Pinch hot smoked paprika
How
to make Wilted Spinach and Serrano Ham Salad
-
Prepare the spinach. Wash in cold water, drain well
and pat dry with kitchen paper, then roughly chop.
- Peel
and dice the onion and dice the tomatoes.
- Place
the onion, tomatoes and spinach into a large serving
bowl and mix.
- Add
a splash of white wine vinegar, season with salt and
pepper and mix again.
- Heat
a little olive oil and fry the Serrano ham until dark
and crispy, then add the ham to the rest of the salad
and toss well.
- Pour
over the oil from the pan which will help wilt the
spinach nicely and then top with a sprinkle of paprika.
Serve
with a really chilled glass of dry fino sherry or even
a semi sweet Diamante white Rioja.
