This Spanish beef recipe is one of only a few traditional
beef recipes from Spain. Meat dishes tend to be predominantly
pork and lamb and in Andalucia it is rare to find beef
recipes on the menu. The use of olives in this dish
adds some real Spanish flavour and compliments the beef
extremely well.
Ingredients
for Spanish Beef with Green Olives
1kg Beef (topside is good) cut into steaks
1 Large onion diced
1 Green pepper diced
2 tbsp Plain flour
Red wine
Olive oil
1 Jar pitted green olives halved
How
to make Spanish Beef with Green Olives
- Fry
the beef steaks to seal then add to a casserole dish.
- Saute
the onion and pepper, add flour and cook for 2 minutes
before transferring to the casserole dish with the
beef.
- Add
2 glasses of red wine and 500mls of water and cook
for 1 hour
- Add
the olives and cook for a further 20 minutes
