The key with this recipe is buy fresh and juicy oranges,
accompanied with the avocado and olives this recipe
boasts some real Spanish flavour with a Jerez twist
to finish.
Ingredients
for Avocado and Orange Salad
3 Large Oranges
2 Large Avocados
250g Pitted olives (green or black / split Arbequine,
Manzanilla)
6 Wafer thin slices of onion
Sherry
vinegar
Olive oil
How
to make Avocado and Orange Salad
- Peel
the oranges as cleanly as possible removing as much
pith as possible, then cut into 1cm thick slices and
lay in the base of a large cazuela.

Peel and slice the avocado and arrange on top of the
oranges.

Slice the onion and sprinkle the wafer thin rings
on top.
- Sprinkle
lightly with sherry vinegar all over the platter.
- Add
a generous drizzle of extra virgin olive oil.
