Sobrasada! This round spreadable sausage from Mallorca is a favourite with many top class establishments and delicatessens. A little known but gourmet class artisan creation, the sobrasada is most frequently enjoyed on toast, with cheese or drizzled with honey.

Ingredients for Sobrasada with Beans and Manchego

150g Sobrasada
400g Cooked white beans
1 Small onion (diced)
1 Garlic clove (crushed)
1 Large tomato (pureed)
3 - 4 Slices of Spanish Cheese
Olive oil

How to make Sobrasada with Beans and Manchego

  • Sauté onion and garlic in olive oil.
  • When the onion is brown add tomato and stir.
  • Add white beans and cook for 4 - 5 minutes.
  • Place the contents into a 16cm terracotta cazuela and spread the sobrasada sausage over the top, then place the cheese slices on top.
  • Grill for a few minutes until cheese is golden
  • Garnish with parsley and serve
