Spanish seafood tapas, more simplicity with great flavour! Here we have combined mackerel with fresh avocado, good extra virgin olive oil and mini toasts - ideal for tapas parties and Spanish themed functions as an appetizer.

Ingredients for Mackerel and Avocado Toasts

1 400g Mackerel
Mini breads / toasts
6 Vine tomatoes
2 Avocados
Extra virgin olive oil
Cracked black pepper

How to make Mackerel and Avocado Toasts

  • Carefully peel the avocados and cut into slices.
  • Lay the avocado slices on top of the bread.
  • Using a sharp ham knife carefully cut slithers of mackerel away from the skin and place on top of the avocado.
  • Cut the tomatoes into slices or quarters and place on top of the fish/avocado.
  • Drizzle with olive oil.
  • Sprinkle with cracked black pepper.
