This recipe for Serrano ham wrapped leeks is a variation on a tapas recipe made locally here in Orce village. More of a "racione" or big tapa this dish is actually three tapas served as one. Topped with herbs and Manchego the flavour of the ham and the leek works exceptionally well and provides a hot tapa that is both tasty and a little different.
