This Spanish recipe for baked eggs really is a true
campo dish in every sense. The eggs are cracked into
terracotta cazuelas then covered with vine tomatoes
and slices of serrano ham before being sprinkled with
herbs and then baked. Delicious, easy and very Andaluz!

ham (hand sliced)
2 Vine tomatoes
1 Tsp Smoked paprika
1 Tsp Dried oregano
Cracked black pepper
Equipment: 4 x terracotta cazuelas (14cm)
