Ingredients for Summer Pepper Sauce

4 Red Peppers
Olive Oil
125ml Wholemilk Plain Yoghurt

How to make Summer Pepper Sauce

  • Wash the peppers, blanch quickly in boiling water in order to peel off the skin.
  • Cut in half and remove any seeds and the white ribs, then dice up.
  • Sautee for 10 minutes in hot olive oil until soft.
  • Season with salt and pepper.
  • Then add water (enough water to cover) and cook for 25 minutes until all water has evaporated. (If water has evaporated before the 25 minutes is up you need to add more.)
  • Remove from the stove.
  • Once cooled, blend with chives and yogurt.
  • Use as a dip or as a dressing for a cold chicken salad.
