Sardines are a very popular Spanish lunch, the fish
are usually just baked and served with boiled potatoes
or simply fresh bread and olive oil. Cooking sardines
on the barbeque is again, very popular and also presents
the opportunity to cook the sardines in a slightly different
way taking advantage of the hot coals and getting that
lovely smokey flavour. This recipe for sardines is very
simple using lemon and thyme, great tapas or as a starter.
for Barbeque Lemon Sardines
24 Fresh sardines
4 Sprigs of thyme
Extra virgin olive oil
Hinged barbeque grill
to make Barbeque Lemon Sardines
and butterfly the sardines (ask your fishmonger to
do this for you) by removing the heads and spine.
each lemon in half lengthways and then slice each
half into six thin slices.
a sheet of kitchen foil over your opened grill.
each butterflied sardine and close it, then stuff
a lemon slice between the fillets.
the thyme sprigs over the top of all the fish and
season well with salt and pepper.
another sheet of kitchen foil over the top and close
for 5 minutes each side.
