Sardines are a very popular Spanish lunch, the fish are usually just baked and served with boiled potatoes or simply fresh bread and olive oil. Cooking sardines on the barbeque is again, very popular and also presents the opportunity to cook the sardines in a slightly different way taking advantage of the hot coals and getting that lovely smokey flavour. This recipe for sardines is very simple using lemon and thyme, great tapas or as a starter.

Ingredients for Barbeque Lemon Sardines

24 Fresh sardines
2 Lemons
4 Sprigs of thyme
Salt
Pepper
Extra virgin olive oil

Equipment:
Hinged barbeque grill
Kitchen foil

How to make Barbeque Lemon Sardines

  • Clean and butterfly the sardines (ask your fishmonger to do this for you) by removing the heads and spine.
  • Cut each lemon in half lengthways and then slice each half into six thin slices.
  • Lay a sheet of kitchen foil over your opened grill.
  • Take each butterflied sardine and close it, then stuff a lemon slice between the fillets.
  • Place the thyme sprigs over the top of all the fish and season well with salt and pepper.
  • Lay another sheet of kitchen foil over the top and close the grill.
  • Barbeque for 5 minutes each side.
  • Serve with a generous drizzle of olive oil with salad or fresh bread.
