What is Fideos? Fideos is pasta, eaten regularly throughout the Mediterranean and very popular in Spain, particularly Andalucia. The short thin noodles are always cooked in a sauce and can be used in a variety of Spanish dishes including meat, fish and many types of soup. For this recipe we have used boneless pork accompanied by garlic, tomatoes with the addition of smoked paprika for that lovely earthy flavour. Serve in bowls for a warming winter lunch or on small plates with bread for tapas.

Ingredients for Fideos a la Cueva

250g Fideos
500g boneless pork, cubed
3 Garlic cloves, chopped
6 Tablespoons tomato frito
1 Tablespoon hot smoked paprika
750mls Fish stock
Olive oil
Grated Manchego cheese
Parsley
Salt
Pepper

How to make Fideos a la Cueva

  • Bring the stock to the boil then leave to one side.
  • Season the pork cubes well with salt and pepper and set aside on a plate.
  • Heat some olive oil in a cazuela or frying pan and lightly fry the chopped garlic.
  • When the garlic begins to brown add the pork and mix well, fry for a further 5 minutes.
  • Add the tomato frito and mix well then add the fideos noodles and leave to simmer for a further 5 minutes.
  • Add the fish stock and paprika, stir well and simmer for a further 10 minutes.
  • When the noodles are tender serve into bowls, sprinkle with grated Manchego cheese and garnish with parsley.
