What is Fideos? Fideos is pasta, eaten regularly throughout
the Mediterranean and very popular in Spain, particularly
Andalucia. The short thin noodles are always cooked
in a sauce and can be used in a variety of Spanish dishes
including meat, fish and many types of soup. For this
recipe we have used boneless pork accompanied by garlic,
tomatoes with the addition of smoked paprika for that
lovely earthy flavour. Serve in bowls for a warming
winter lunch or on small plates with bread for tapas.
