Ingredients for Baked Peaches with Strawberry Cream

150 ml double cream, lightly whipped
150 g ripe strawberries, hulled and chopped
4 ripe peaches
2 tablespoons Amaretto, or orange juice, if preferred
a little soft brown sugar
6 Amaretti biscuits lightly crushed

To garnish:
A few fresh strawberries

How to make Baked Peaches with Strawberry Cream

  • Preheat the oven to 180ºC / 350ºF / Gas Mark 4
  • Gently stir together the strawberries and double cream.
  • Cut the peaches in half lengthways and remove the stone. Place in a shallow ovenproof dish and sprinkle over the Amaretto and soft brown sugar.

    To prepare ahead complete to the above stage and then bake when required.
  • Place in the oven for 10 minutes or until just beginning ‘give’. Stir the Amaretti biscuits in to the strawberry cream.
  • Place two peach halves on a plate and drizzle over a little of the juices from the bottom of the pan, place a large spoonful of the cream on the top or at the side of the peaches and garnish with the fresh strawberries.
