Spanish chorizo and Swiss chard may seem at first to be an odd combination but the buttery flavour of fresh chard compliments the spicy chorizo very well. A simple recipe with a delightful flavour which is ideal served as starter or part of a main meal. The key with chard is to buy fresh so try and get some from your local farmers market or stall where it is in fresh supply.

Ingredients for Chorizo and Swiss Chard

1 Large bunch fresh Swiss chard
2 Chorizo picante (hot) sliced
1 Clove garlic, sliced
1 Teaspoon butter
Pinch crushed red pepper
Olive oil
Water

How to make Chorizo and Swiss Chard

  • Rinse the chard thoroughly in cold water.
  • Chop off the bottom third of the stalk, roll up the leaves and slice into inch wide strips.
  • Heat a saucepan and pour in a slug of olive oil and add the garlic, when the garlic begins to sizzle add the chard and cover the pan. Cook for 5 minutes.
  • Turn over the leaves in the pan and add a tablespoon of water if they are looking dry, cook for a further 5 minutes until tender.
  • Meanwhile take the chorizo sausages and slice into half inch segments, lightly fry in olive oil.
  • When the chard is cooked add the fried chorizo and toss well in the pan.
  • Serve immediately and pour over some of the juices from the chorizo.
  • Serve with tomatoes and fresh bread.
