Liver and Serrano ham rolls make great hot tapas, you can use sheep’s liver or calf’s liver as the meat is cut into strips before being wrapped in thin slices of Serrano ham and chopped sage leaves before being lightly fried in butter. Machine cut Serrano ham is best for wrapping although slices can also be cut direct from the leg. Ideal Spanish tapas for any occasion!

Ingredients for Liver and Serrano Ham Rolls

12 Slices of Serrano ham
300g Liver, cleaned
8 Fresh sage leaves, chopped
50g Butter
Salt
Pepper

How to make Liver and Serrano Ham Rolls

  • Cut the liver into 12 strips approximately 8cm long and 2cm thick.
  • Lay each Serrano ham slice on a chopping board, rub salt and pepper into the liver strips and place one on top of each ham slice.
  • Sprinkle the liver with the chopped sage then roll up.
  • Melt the butter in a frying pan and fry each liver and ham roll for 6 – 7 minutes or until lightly browned or ham turns crispy.
  • Serve using cocktail sticks.
