Liver and Serrano ham rolls make great hot tapas, you
can use sheeps liver or calfs liver as the
meat is cut into strips before being wrapped in thin
slices of Serrano ham and chopped sage leaves before
being lightly fried in butter. Machine cut Serrano ham
is best for wrapping although slices can also be cut
direct from the leg. Ideal Spanish tapas for any occasion!
