This recipe for Iberico bellota ham salad has a wonderful
flavour, accompanied by king prawns and asparagus this
combination is true taste of Andalucia. Nutty Iberico
flavours compliment the seafood perfectly, just add
a drizzle of good quality extra virgin olive oil for
a delicious summer salad.

4 Asparagus spears
6 King prawns
Mixed salad leaves
Extra virgin olive oil
to make Iberico Bellota Ham and King Prawn Salad
the ends of the asparagus spears and cut each spear
into quarters. Boil in a saucepan until tender.
Roughly chop the tomato, mix with the salad leaves
and arrange on a plate/tapas plates.
Peel the prawns leaving the tails on, add a splash
of olive oil in a frying pan and lightly fry on both
sides for 2 minutes.
Remove the asparagus from the pan and arrange over

Place the prawns on top of the ham and drizzle with
good extra virgin olive oil. Enjoy with fresh crusty
