Spanish kebabs (pinchos or pinchitos) are very popular during the summer months when the afternoon or evening barbeques are lit and friends arrive for a bite to eat. Kebabs are easy to make, simple to cook and are as versatile as you wish to make them. Kebabs are also a convenient way of creating lightly char grilled vegetables such as onions, peppers and cherry tomatoes. For this Spanish kebab recipe we have added some Serrano ham tacos (small thick slices of cured Serrano ham) in between the vegetables which offers a mild salty pairing to the sweetness of the vegetables. Ingredients Serrano Ham and Mixed Vegetable Kebabs

200g Serrano ham, sliced thick
1 Medium onion
1 Large red bell pepper
8 Medium white mushrooms
8 Chinese mushrooms
1 Small courgette
18 Cherry tomatoes

How to make Serrano Ham and Mixed Vegetable Kebabs

  • Clean the vegetables and chop into bite size pieces ready for the kebab skewer.
  • Carve two thick slices (1cm) from your serrano ham and roughly slice into squares.
  • Skewer the ingredients over the kebab skewers alternating.
  • Cook over the barbeque for 10 minutes turning regularly.
  • Serve with other barbequed meats as a side dish and drizzle with good olive oil.
