kebabs (pinchos or pinchitos) are very popular during the
summer months when the afternoon or evening barbeques are
lit and friends arrive for a bite to eat. Kebabs are easy
to make, simple to cook and are as versatile as you wish
to make them. Kebabs are also a convenient way of creating
lightly char grilled vegetables such as onions, peppers
and cherry tomatoes. For this Spanish kebab recipe we have
added some Serrano ham tacos (small thick slices of cured
Serrano ham) in between the vegetables which offers a mild
salty pairing to the sweetness of the vegetables. Great
tapas that can be eaten hot or cold and deliciously tasty
with a drizzle of extra virgin oil.
