Braised endives make a delicious warming starter and can be served as simple tapas with a little Serrano ham or as a side dish with meat and fish. After 30 minutes of cooking the endives soften are become a juicy treat with a unique flavour. Endives can also be cooked over the barbecue but for this easy recipe we are braising them with a lemon juice twist.

Ingredients Braised Endives

8 Endives
Olive oil
Juice of 1 whole lemon
Crushed black peppercorns

How to make Braised Endives

  • Preheat the oven to 180°C.
  • Remove any outer leaves that look dry or are starting to brown.
  • Place in a terracotta cazuela or baking dish, drizzle with olive oil and season as required with salt and pepper.
  • Squeeze the lemon juice over the endives – be generous!
  • Cook in oven for 35 – 40 minutes.
