Spanish Style Squid

This recipe for Spanish style squid makes a great summer lunch dish or amazing tapas dish, served in small portions. The colour and vibrancy of the tomatoes, chilli, smoky paprika and parsley bring out the best in the squid. A hint of garlic and of course good quality Spanish Extra Virgin olive oil, make this dish, both amazing to look at and delicious to eat. Simple flavour combinations, guaranteed to please every time.

Ingredients for Spanish Style Squid

2 medium-large squid
1 small onion
2 garlic cloves
3 medium tomatoes
1 small red chilli
100ml extra virgin olive oil
1 tsp sweet or hot smoked paprika
1 tbsp fresh parsley, finely chopped
Salt and pepper
Lemon for squeezing

How to make Spanish Style Squid

  • Prepare the vegetables. Peel and chop the onion as finely as you can. Peel and either crush or finely chop the garlic. Chop the tomatoes into small chunks.

  • Prepare the squid and clean thoroughly. See here

  • Once the squid has been prepared, cut the tentacles off and then chop the body into sizes about 4x4cm, gently score each piece, so you get a diamond pattern.

  • Heat the oil in a large heavy based frying pan, add the onion and the garlic and cook gently until they begin to soften but don’t allow them to turn brown.

  • Add the chopped tomatoes and chilli and cook for 5-6 minutes until the tomatoes are nice and squishy.

  • Add your squid pieces and the paprika and cook, stirring until the squid is cooked but still tender – about 4 or 5 minutes.

  • Season with a little salt and pepper and then sprinkle over the parsley.

  • Serve in small bowls for tapas portions or one large bowl for sharing. Add a squeeze of lemon and lots of fresh crusty bread for mopping up the juices.
