Italians are known for their food and Mediterranean love of life but whereas they 'live to eat', in Britain we tend to 'eat to live.' For us, eating is seen as more of a necessity and not about the experience itself. Perhaps we should all take note of the Italian philosophy when it comes to food. If we all have to eat to live, why not make it an enjoyable occasion?

In today's fast-paced society, it's often difficult to find time to sit down with your loved ones and have quality time together, let alone enjoy a meal. Less preparation means more time to enjoy our food - but it doesn't mean we need to compromise on taste and nutrition.

GIOVANNI RANA TENDER SPINACH & FRESH RICOTTA TORTELLONI PRIMAVERA RECIPE

Ingredients

1 pack of Giovanni Rana Spinach & Ricotta
70g broad beans skin removed
70g of green beans, halved
70g of peas
100ml double cream
1 shallot finely chopped
Olive oil
Grated Parmesan

How to make

  • Bring a large pan of salted water to the boil.
  • In a frying pan, heat one tablespoon of olive oil, add the chopped shallot and fry gently for 5 minutes until softened. Add the double cream, season and simmer on a low heat.
  • Add broad beans, green beans and peas and simmer for 3 minutes.
  • Add the Giovanni Rana Fresh Ricotta & Tender Spinach Tortelloni to the pan and cook for one minute.
  • Add a large spoonful of pasta water to the cream to loosen the sauce, then add the drained pasta and vegetables. Toss to coat and serve with grated parmesan.
