Sweet
Potato Broth with Fresh Bread

Chef Lesley Waters cooks great food for fussy kids
We all know what it is like when it
comes to tea time with kids it can be hard enough
getting them to sit still at the table let alone anything
else! Between the ages of one and three years it can
be difficult to get them to eat the right foods, and
to know if they are getting enough nutrients, particularly
as some toddlers can become fussy eaters during this
time.
Help is here with Celebrity Chef and mother Lesley
Waters along with SMA Nutritionist Anne Sidnell who
have designed six easy meals to satisfy even the fussiest
of taste buds, and helps provide balanced meals with
key nutrients like Iron, Omega 3 and 6 and Vitamin D
that are needed for healthy growth and development.
In the second webisode in the series, Lesley cooks
up a delicious sweet potato broth that was a firm favourite
with her children.
Lesleys tip:
When my children were toddlers I found it good to give
them different types foods to experiment with. This
recipe is great as it contains calcium from the milk,
and starch from the sweet potato, and is a great way
to introduce different textures.

SWEET
POTATO BROTH WITH FRESH BREAD
"When
my children were toddlers I found it good to give them
different types foods to experiment with. One of their
favourite foods was fresh bread which I think is a great
way of introducing different texture alongside the smooth
broth." ~ Lesley Waters
Ingredients
4 tsp olive oil
1 small onion, finely chopped
225 g sweet potato, peeled and diced
250 ml whole cows milk
250 ml vegetable stock
chunks of fresh bread
Method
- Heat
the 2 tsp of olive oil in a pan and gently fry the
onion for about 5 minutes.
- Add
the sweet potato, stir in the milk, stock and bring
to the boil.
- Cover
and simmer for 15 - 20 minutes.
- Place
the broth into a liquidiser and whiz until smooth.
- Divide
broth into 2 bowls and serve with pieces of your toddlers
favourite fresh chunky bread.
