Roasted
Garlic Cloves and Shallots en Papillote
This

Ingredients
garlic
cloves

shallots
6

Method
Select
garlic cloves that are similar in size
Select
shallots that are similar in size
Peel
the shallots and garlic (or leave un peeled if preferred)
toss in a little salt to season
Heat
a frying/sauté pan, add a small amount of oil
Carefully
place in the shallots and cook gently for 3 - 5 minutes
Add
the garlic cloves and continue for 2 minutes
Place
into tin foil pouches, season and seal
Place
in the oven (180ºC) and roast for approx 8 minutes
Remove
from the oven and keep warm until required. (Will
only hold for approximately 10 minutes. After this
they will begin to shrivel and look unappetising.)
For
service remove from foil and use as required. (These
may be left in the foil if a well prepared pocket
has been used that would suit presenting to a customer)
