ROASTED GARLIC CLOVES AND SHALLOTS EN PAPILLOTE RECIPE BY TALLYRAND

Ingredients

shallots

Method

  • Select garlic cloves that are similar in size

  • Select shallots that are similar in size

  • Peel the shallots and garlic (or leave un peeled if preferred) toss in a little salt to season

  • Heat a frying/sauté pan, add a small amount of oil

  • Carefully place in the shallots and cook gently for 3 - 5 minutes

  • Add the garlic cloves and continue for 2 minutes

  • Place into tin foil pouches, season and seal

  • Place in the oven (180ºC) and roast for approximately 8 minutes

  • Remove from the oven and keep warm until required (Will only hold for approximately 10 minutes - fter this they will begin to shrivel and look unappetising)

  • For service remove from foil and use as required
