| ROASTED
GARLIC CLOVES AND SHALLOTS EN PAPILLOTE |

Ingredients

shallots |

Method
- Select
garlic cloves that are similar in size
- Select
shallots that are similar in size
- Peel
the shallots and garlic (or leave un peeled if preferred)
toss in a little salt to season
- Heat
a frying/sauté pan, add a small amount of oil
- Carefully
place in the shallots and cook gently for 3 - 5 minutes
- Add
the garlic cloves and continue for 2 minutes
- Place
into tin foil pouches, season and seal
- Place
in the oven (180ºC) and roast for approximately
8 minutes
- Remove
from the oven and keep warm until required (Will only
hold for approximately 10 minutes - fter this they
will begin to shrivel and look unappetising)
- For
service remove from foil and use as required
